Smack Shack as a food truck first started in 2010 in downtown Minneapolis with lobster rolls although geographically located in a somewhat ridiculous spot. Owner Josh Thoma had a great recipe and the notion that Twin Cities would be as eager to embrace lobster flavor as any coastal city. 

One of the major factors that accompanied the changes is the interaction between the City of Minneapolis and food trucks based on the promotion of the menu of the moving truck. The new law that was enacted in 2011 permitted trucks to park at the city meters on the designated streets so that the truck could get out and create more fans.

It all started as a food truck where they cooked for the first time in a kitchen located at the 1029 Bar in December 2010, and the “official” start was marked by a lobster boil in January 2011. The two proceeded to develop more of this connection and soon the lobster lovers, the patrons, both the local and the national media were warming up to the 1029 Bar.

Minutes into the encounter, a unit from the Food Network’s “Diners, Drive-Ins and Dives”, featuring Guy Fieri arrived at the scene to shoot a segment about the truck and the 1029. Eventually, the day arrived, and Smack Shack officially opened its doors on a frigid night in February of 2013 and has been lauded by both the fans and food.
