In 1969, Ken and Pati Davidson quit their day jobs to build an art gallery and Mexican import shop in the house of Pati’s grandmother on Bonfoy Street, in the then-eastern area of the city.

In the 1960s, when margaritas were all the rage, the store’s proprietors opted to honor the white daisies they saw on their Mexican travels by naming their establishment after them.

Pati brought up happy memories of her grandmother’s dining room soup meals when she was a kid, and Ken was a sculptor who worked with metal and wood.

They opted to restructure two years later after realizing that the local food was more appealing than the imported food.

Ken and Pati hired architect Al Feinstein to build the New Margarita on property that has been in Pati’s family since the turn of the last century.

Upon acquiring the Teachout ranch and a part of General Palmer’s estate, Tudor—Pati’s grandfather—had every intention of mining the coal vein that coursed through the sandstone formations along the western bank of Monument Creek.

For the last century, his family has taken pleasure in picnicking there rather than mining it (though great-aunt Bessie and her husband did try farming for a while in the 1920s). The scenery captivated him.

There is a fortunate history to cooking on the farm, as Aunt Bessie would tell stories of chasing away “the Indians” while she baked her gingerbread.

In 1974, when Pati pursued more culinary education, improved her soup and salad concept, and finished further cooking seminars, the Margarita at Pine Creek made its debut.

The Round building, which was supposed to be Ken’s studio, was leased out as an art gallery because of the huge demand for his hosting, dishwashing, fixing, and groundskeeping services.

In what was formerly a gift and plant shop, the restaurant’s southwest wing is now a dining establishment. In 1984, the “South 40” dining room was created by combining these two spaces.

One of the notable residents of the Colorado Springs Omelette Parlour in the 1920s was Ruth Etting.

When she finally retired, she and her husband opened the T-Bone Club, a restaurant that would later be known around the block as The Hackney House.

The Quintalon Corporation took full ownership of the Omelette Parlour in 1993 and has been operating it ever since. 

The Omelette Parlour has won several honors, including Best Pancakes and Best Breakfast, throughout this time from both the Independent and the Gazette.

Since 1972, ranchers have gathered at Sandy’s Restaurant on the outskirts of Colorado Springs, at the crossroads of two desolate grassland roads, to sip coffee and talk about cattle after a trip into town.

There have been a lot of changes in those years.

Sandy used to be surrounded by wind-tousled grass, but now it’s surrounded by Air Force facilities and defense contractors.

Space Village Avenue is the new name for the once-lone turnoff. Sandy’s has a large bar at the back, booths along the wood-paneled walls decorated with old waggon parts, and a painting of John Wayne, of course.

Three large tables called the “Liar’s Table,” the “Wannabee’s Table,” and the “Trucker’s Table,” are located in the middle, where various regular groups congregate to have coffee and talk about world events.

The bargain was cemented with a handcrafted quarter-pound burger paired with guacamole prepared from finely diced tomatoes and ripe avocados, rather than a box of green, citric acid-stabilized sludge.

When examining the menu more carefully, it becomes apparent that numerous items are out of production.

These items, along with Sandy’s neighborhood, have been covered up by the modern era. That isn’t the situation here, however.

Rich strands of corned beef are fried with potatoes that have been baked, onion, and a hint of Cajun spice to create a subtle and interesting combination.

The combination that is left over makes a lovely accompaniment for eggs.

Nothing is carried out in a mechanical manner.”It’s a pain, but that is just how we’ve always done it,” explains Connie Crippen, who bought the business in 2001 and has worked here sometimes since she was thirteen.

This is not to argue that Sandy ignores the diner milieux that are so common.

The Hunter’s Sandwich is composed of grilled tomatoes, onions, and roast beef between slices of homemade bread, topped with a mound of melty American cheese.

Furthermore, Sandy’s homemade cuisine isn’t inherently tasty.

The handmade biscuits and gravy came with underdone sausage and a sauce that seemed overly thick from the flour and white pepper.

However, in general, the most popular items among the patrons are made the old-fashioned way, or more accurately, the right way: the amazing onion rings, the burgers, the enormous six-egg omelets, and the excellent eggs and home fries.

Sandy’s Restaurant awarded their Breakfast of Champions four stars. 5:30 am. to 2:30 pm. Monday through Friday; 5:30 am. to 2 pm., Saturday and Sunday. Saturdays from 6 am. to 1 pm.
